CSCA Participates in 19th Annual Spinazzola Gala Festival of Food and Wine
Students from the
Cambridge School of Culinary Arts presented nearly 900 servings
of Truffled Foie Gras at the 19th Annual Spinazzola Gala on
Friday, January 30, 2004. Michael Ginor, co-founder and co-owner
of Hudson Valley Foie Gras, was the guest celebrity chef for the
school. His creation was the foie gras sandwiched between a
ginger molasses lace cookie accompanied with mixed greens and a
fig essence vinaigrette.
