Food Network Films Italian Holiday Program at
CSCA

The Cambridge School of Culinary Arts is pleased to announce
that the Food Network will re-broadcast An Italian Christmas
with Mario and Giada! Original filming for the show was on
Wednesday, January 7, 2004. Roberta Dowling, CCP, and 12
students from her Italian cuisine class are featured on the
show. Details of the filming follow. Air dates for 2007 are
Tuesday, December 4 at 10:00pm; Wednesday, December 5 at 1:00am,
Saturday, December 8 at 2:00pm, and Sunday, December 9 at
5:00pm.
On Wednesday, January 7, 2004, Food Network Celebrity Chefs
Mario Batali ("Molto Mario" and "Ciao America") and Giada
DeLaurentiis ("Everyday Italian") filmed a segment of an
upcoming television program at the Cambridge School of Culinary
Arts. The one-hour-long program features Batali and DeLaurentiis
seeking unique Italian food traditions during the holidays. The
segment filmed at the CSCA showcased Roberta L. Dowling's
one-of-a-kind ravioli creations and a half dozen antipasti
dishes.

Kitchen "A" underwent a transformation to prepare for the
filming. Garland, cans of food stuffs, and other holiday
paraphernalia adorned the kitchen. Filming began with Mario,
Giada, Roberta, and six students, in which Roberta demonstrated
how to make pasta by hand. This segment covered pasta making,
coloring pasta, pasta rolling, and pasta shaping. Each
participant had the opportunity to make a ravioli, which
included a variety of Christmas shapes, colors, and sizes.
Raviolis were then stuffed with a lobster-mascarpone filling,
cooked, and dressed with a truffle butter sauce.

A different set of six students then worked with Roberta and
Giada to make the antipasti dishes, which included Peperoni alla
Piemontese, Insalata di Cappone, Antipasti de Salumi, Grilled
Calamari on a bed of shaved fennel, and Bruschetta.

The dinner scene was the last to be filmed. Lecture area "A" was
decorated for Christmas and the table was set festively for 15.
Mario, Giada, and Roberta dined with Roberta's 12 students,
feasting on the raviolis and antipasti.
