Master Pasta Class with CSCA Executive Chef Roberta L. Dowling
The Cambridge School of Culinary Arts will host an exclusive master pasta making class taught by Roberta L. Dowling, executive chef and founder. In the class, Chef Roberta will teach how to make her unique raviolis, as featured on the Food Network's program An Italian Christmas with Mario and Giada. The raviolis are made with a variety of vibrantly colored pasta doughs. She uses cookie cutters to cut shapes in the rolled dough to make an assortment of raviolis for most holidays: hearts, decorated eggs, pumpkins/jack-o-lanterns, turkeys, Christmas trees, wreaths, bells, reindeer, gingerbread men and women, stars, snowflakes. Chef Roberta will teach the class the art of making and coloring pasta dough with vegetable purees, kneading and rolling pasta, cutting out shapes, filling and sealing the raviolis, and cooking. Recipes include master pasta doughs, vegetable purees, fillings, and sauces.
