The CSCA is excited to announce that several CSCA chef instructors and alumni have recorded cooking videos for the website how2heroes.com. CSCA Chef Instructor Jim Swasey demonstrates trussing and roasting chicken from the chicken basics class and Hong Xue (PCP '04) shows off her knife skills in a watermelon carving demo. View Simone Nakhoul's (PCP '06) Portuguese Cataplana and instructional videos on cleaning squid and conch. Recent graduate Phil Dwyer (PCP '09) cooks his signature dish Honey-Lime Marinated Pork Tenderloin. Check out Mary Kate Paris's (CCP '09) Oatmeal Cupcakes and Hilary Koloski's (PPP '09) Sunrise Fruit & Nut Cookies in the newly updated dessert sections. Yvette Taylor, owner of Queen of the Pantry condiment line, introduces cooking with dukkah. CSCA Recreational instructors Eliana Hussain (PCP '04) and Scott Ryan (PCP '07) demonstrate onion dicing and sardine grilling, respectively. Just in time for fall, Alex Lewin (PCP '06) shows how to preserve and pickle foods with kimchi, rutabaga, and sauerkraut demos. More videos to follow in the upcoming months!

Nemo Bolin PCP '03 was nominated in Food & Wine Magazine's 2011 People's Best New Chef New England competition. Diners can vote for their favorite chefs through the Food & Wine website from February 15 through March 1, 2011. Nemo was nominated along with nine other chefs from Massachusetts, Connecticut, Maine, and Rhode Island in the competition. The overall winner of the People's Best New Chef voting will receive a feature in the June 2011 issue of Food & Wine. Nemo has worked in the culinary industry for 15 years and at some of the nation's best restaurants, including No. 9 Park, Locke-Ober, Craigie St. Bistrot, L'Etoile, and Rubicon. He owns Cook & Brown with his wife. Vote for Nemo at Food & Wine through March 1st.

Award-winning CSCA chef instructor Lisa Raffael appeared in The Learning Channel's (TLC) Fabulous Cakes program in an episode titled "Boston: Up, Up, and Away."
For the episode, TLC crews followed Chef Lisa at her bakery, Delicious Desserts, in Falmouth, Massachusetts, as she constructs a beautiful hot-air balloon wedding cake. The episode aired Tuesday, February 8 and on Wednesday, February 9. It reairs on Monday, February 21 at 1:00pm (check local listings).
Lisa has appeared on the Food Network and has had images of her cakes published in BRIDES Magazine, The Perfect Wedding, and Boston Magazine. The Daily Free Press recently published the profile Pursuing Passion over Protocol, on Lisa. She is a graduate of Boston University's School of Management. Lisa's Delicious Desserts has been a CBS A-List Best Wedding Cake favorite since 2006.

Eunice battles Bobby Flay mixing bowl-to-mixing bowl on March 9 in an episode of "Throwdown with Bobby Flay." Eunice will make her famous Boston Cream Pie, Massachusetts' official dessert, for the coveted title of Throwdown winner. The episode airs on the Food Network on March 9th at 8:30pm (check local listings).

Eunice and her husband, Steve, opened a second Bread & Chocolate in Newton Highlands in July 2010. Bread & Chocolate Bakery Cafe's baked goods have rapidly become Newtonville and Boston community favorites. The Boston Globe's Food Section featured Bread & Chocolate's Sage Corn Muffin in the "Short Orders" column on Wednesday, November 4, 2009.
Boston Magazine bestowed Bread & Chocolate Bakery Cafe in Newtonville, Massachusetts, with a "Best of Boston 2009" award in its August 2009 issue. Owned by CSCA Alumni Eunice Feller, the 3-year old business has become the 'go-to' bakery in Newton for morning muffins and cappuccino, special occasion treats, lunch, afternoon snacks, and seasonal baked goods. Featured in a "Boston Magazine's Annual Picks" segment on Boston Channel 5's Chronicle on July 29, 2009, Chronicle personality Shayna Seymour featured Eunice, Steve (Eunice's husband and Bread & Chocolate co-owner), and a variety of baked goods including Eunice's famous Whoopie Pies and Donut Muffins.
Feller has received a number of accolades since opening her shop in 2006, including "Readers #1 Choice and Regional Favorite" for best bakery and best coffee house by the Newton TAB and Metrowest Community Newspapers in 2009 and 2007, and "Best of the New" by The Boston Globe in January 2007.

Yvette Taylor started her condiment line, Queen of the Pantry, with dukkah on her mind. She tasted her first dukkah, a mix of nuts, seeds, and spices, while working in a winery in New Zealand. Since then she's worked to create her own version of the toasted and ground mixture. Recently named as one of The Boston Globe Magazine's list of 50 "tasty, satisfying, surprising, fun, yummy, finger-licking, scrumptious" Food Finds of 2009, she's launched four flavors of dukkah (Aromatic Almond, Atomic Chili, Spicy Chili, and Coconut Mango Macadamia), three "Kick in the Nuts" flavored and spiced nut product varieties, and three flavors of onion jams.
The Queen of the Pantry makes several appearances around Boston, demonstrating recipes with her dukkah, including Gordon's Fine Wines and the Slow Food Boston Food Preservation Series. Edible Boston published an article about Yvette and her condiment line in its Summer 2009 edition. Demonstration videos will soon be posted on the How2Heroes website.
